Cooking with the General..........Today I have been making pickled Onions. This is how you do it.
You will need. some big jars. Some pickling onions. 4 lbs salt. some strong malt vinegar. crushed chillies. black peppercorns. a bottle of dark rum.
Peel the onions (If you cry it is because you are a poof, and not a reaction to the onions.)
Fill the sink with the salt and add a little water - we are after a really thick salty brine which should have the consistancy of semen. Chuck the onions in and stir them around. Leave them for a few hours. The salt draws moisture out of the onions and makes them stay crunchy for longer.
Rinse the onions in cold water. Dry them quickly and put them in the jars with the crushed chillies and pepper corns.
Pour the vinegar over them until there is an air gap of about an inch and a half at the top of the jars.
Top up the last inch and a half with Rum. the onions should be completely covered. Put the lids on tight.
These will be ready after about three to four weeks. store them in a cool place such as a basement and keep them out of the light. they will be at their best after about three months but will keep easily until this time next year.

bleughhhhhhhhh.....thats one thing to do with it I suppose....save wasting it. Melchett's Spunky Onions....get em while they're hot.

I have never done the brine stage, I just tend to sprinkle them with salt for a few hours and then into the vinegar. I've never done the rum thing either, would be a waste of rum me thinks!! I have a friend who is the pickling meister and his chilli ones make your eyes stick out on stalks. He is using vinegar that is on it's 20th batch! It really hits the spots you didn't know existed!

It's not the peeling the onions that make my eyes water, it's the thought of all those onions drowning in Melchs semen, and then watching your neighbour gag on them. That brought a tear to my eye with laughter....
